Gem Cookies .

 
 

These pretty and cute little gem cookies are my childhood snack and to my surprise it was such a hit when I made it for my son's school party.

I get a warm nostalgic feeling as I recalled buying these from the 'mama shop'. The Indian stall owner would deliberately speak in Mandarin to me as he scooped and weighed out the gem cookies from the big square biscuit tin.

This is home truly where I know I must be. Missing my home country .... hope to be back soon.

Recipe For the cookie dough

150g soft unsalted butter

60g caster sugar

230g plain flour

1 tbsp vanilla essence

Pinch of salt

For the sugary topping

2 - 3 egg whites

Caster sugar - 2 times the weight of the egg whites

Food colouring gel/paste
