These pretty cute little gem cookies are my childhood snack and to my surprise it was such a hit when I made it for my son's school.
A warm nostalgic feel as I recalled buying 50cents from the 'mama shop downstairs', the Indian uncle would deliberately speak in Mandarin as he scooped and weighted the gem cookies from the big square biscuit tin . We would closed the deal by exchanging a smile.
This is home truly where I know I must be. Missing my home country .... hope to be back soon.
Recipe For the cookie dough 150g soft unsalted butter 60g caster sugar 230g plain flour 1 tbsp vanilla essence a pinch of salt For the sugary topping 2 - 3 egg whites , depending on the size of the eggs caster sugar (2 times the weight of the egg whites) Food colouring gel/paste
