Spanish Chicken (Pollo Granadina)

I got this recipe from a friend who lived in Spain for many years. This was one of the several spanish specialty we prepared during one of the church events called 'Meet & Eat'.

I love recipes that don't require too many ingredients but yet tasty and this recipe is definitely one of them. It is necessary to use Serrano Ham for this recipe, the combination of the ham and sherry is heavenly. It’s easy to prepare and full of warmth , wonderful during winter.



Spanish Chicken (Pollo Granadina)
Ingredients
1 kilo chicken (preferably chicken legs)
6 – 8 cloves of garlic (peeled)
200 grams Serrano Ham (diced)
100ml Sherry
Olive oil
Salt and pepper
Fresh Parsley for ganish

Heat olive oil in a large frying pan and sauté the garlic until golden brown.
Remove garlic from heat and set aside.


Fry the chicken until brown on both sides and add Serrano ham along the way.
Follow by Sherry and pepper and sautéed garlic. Taste and add salt if necessary. Please note that Serrano ham is already salty.


Cover and simmer for about 20 – 25 mins.
Garnish with fresh parsley.
The recipe can be served with herb and butter rice or potatoes.
