Minty Nutty Mascarpone Stuffed Dates

A simple and refreshing appetizer and perfect for cocktail party. If you want to make it easier, just fill the dates with Boursin garlic cheese instead.
No cooking required.
















Ingredients
1 packet of medium sized dates (pitted)
200g of mascarpone
1 lemon, juiced
50g of walnuts , finely chopped
2 tablespoon mint, finely chopped
2 tablespoon of icing sugar

Cut down the length of each date and squeeze the dates slightly to open up.
Mix the mascarpone, lemon juice , walnuts and mint together in a bowl. Sift the icing sugar over and mix well.
Fill up the dates with the mascarpone mixture with a small spoon.
Arrange them in a flat plate and serve.

Hi Emily -
I make another version of this recipe - I'll have to try yours!! The version I make, is sooo simple - 2 ingredients - 1 packet dates, 1 packet soft cheese with confited ginger bits... stuff dates with gingered cheese, et voila! I think you'd like it! Next party I'm hosting I'll try your recipe!
