Last week, the temperature was over 30degrees celsius and I have no appetite for a warm dinner. So, I decided to make a 'maaltijd salade' which mean a Salad meal. We enjoyed Alfresco dining in the backyard. This dish is easy to prepare and also healthy. It can also be a vegetarian dish, just do without the salmon.
Baked Salmon with Potatoes Salad
2 pieces of Salmon (150-200g each)
300g new potatoes
2 eggs, hard boiled and cut into halves.
200g French beans
100g green or black olives
1 head of romaine or lettuce
2 tablespoons of mayonnaise
1 tablespoon of vinagratte
1 teaspoon of Dijon mustard
1 tablespoon of honey
1 tablespoon of olive oil
Salt and pepper
Cook the potatoes in boiling water for about 10-15 mins. Drain and let it cool down.
Slice the beans on the diagonal and steam for about 8 mins and cool down.
Preheat oven to 200 degree Celsius. Place salmon on aluminium sheet, sprinkle sea salt and grounded pepper. Drizzle olive oil and wrap the salmon with the aluminium sheet. Bake for 15 mins at 200 degree Celsius.
Whisk the mayo, vinaigrette, honey, olive oil and mustard into a bowl follow by salt and pepper to taste to make into a creamy dressing.
Toss the potatoes and beans into dressing and stir to coat, keeping back a couple of spoonfuls of dressing.
Shred the lettuce or romaine into a large salad bowl and transfer the coated potatoes and beans into the salad bowl. Place the olives and eggs on the salad.
Finish by placing the baked salmon on top and drizzle the leftover dressing on the salmon.
